Rocket and Roses Pear and Cocoa Oaty Crumble

What do you do when you have half of a Cocoa Oaty pie topping left to use up? Freeze it...sure. Or....you could use up the remaining four cooked pears with the topping and make one very delicious crumble dessert. So that is exactly what I did. So simple...so tasty...so naughty. lol. 

We enjoyed ours hot with a scoop of vegan vanilla ice cream melting down over it. Not one word was spoken as we tested this dessert. lol. Go on..treat yourself and make yourself one. *nudge* Go on...lol

Rocket and Roses Pear and Cocoa Oaty Crumble Serves 4
(Original recipe from the Rocket and Roses Vegan Kitchen)

4 poached pears, skinned, cored and quartered

Half of the topping mix recipe below;
1 2/3 cup/5oz gluten free oats
1/3 cup/2oz demerara sugar
1 tsp vanilla extract
2 tbsp cocoa
1/3 cup/2oz vegan butter or margarine

If not using up topping then make the topping and pop half into a freezer bag for next time you make this lol. Mix together the oats, sugar, cocoa and vanilla extract until well combined and then using two knives cut in the margarine until large crumbs are formed. Use half..freeze half. 

Lightly grease a small baking dish with a vegan margarine. Then place the cooked pears across the bottom of the dish. Then pour the topping over the pears and gently press down and level across. 

Bake in a pre-heated oven at 375'F/190'C/Gas Mark 5 for 30 minutes until the topping has darkened but not charcoaled.  

Serve immediately as a hot dessert or leave to cool and then refridgerate as a cold dessert. Serve with vegan vanilla ice cream, pouring cream or custard.
