Spiced Sweet Potato Soup

Kitchen Play List:     Audioslave play list on iPod

Spices...sweet onion...what is not to like about this?? lol. Well that's what went through my mind when I found this little gem hiding in Linda Majzlik's cook book A Vegan Taste of East Africa

From the moment I heated up the onion and adding the spices and then the sweet potato and stock I was salivating. The aroma clung to the house for a few hours after and it was heaven. It's simple to make..tastes gorgeous and a pleasure to eat. Make this for yourself and see..

Spicy Sweet Potato Soup

1 garlic clove, crushed
1" piece of fresh ginger, grated
1 dsp veggie oil
1 rounded tsp ground coriander
1 rounded tsp ground cumin
1/4 tsp ground cardamon
1/4 tsp cinnamon

Fry the onion and ginger in the oil until softened. Add the spices, chilli, garlic and tomato and stir around for 1 minute, then put in the sweet potatoes and stock and bring to the boil.
