Smoked Garlic and Broccoli filled Omelette (vegan)

It's no secret that the first time I tried Susan V aka Fatfreevegan vegan omelette for one recipe...I fell in foodie love with it. It's a regular breakfast/brunch in this house. ML used to enjoy one too until eating became a drag. But this morning ML was 'up and at them' and brought me a breakfast tray with omelette with a familiar filling but once I took my first bite I knew this was something different.

When we were out last weekend shopping for fresh produce we bought a bulb of garlic. Nothing new about that...lol as we get through a lot of garlic around here. But this was a smoked garlic. It was a deep bronze colour and the smell was...well..smokey! lol. And added to the just tender broccoli and creamy omelette...it was delicious. ML served today's offering on a slice of toast which was a nice for a change. But I am just as happy to eat them without.

So to make this recipe please take a quick trip to Susan's recipe page (see link above) for the omelette and then the filling was as simple as this...

Finely chop 1 head of broccoli (small) and set to one side. Finely slice 2 cloves of smoked garlic and lightly cook them in some oil until just fragrant. Add the broccoli and sauté, keeping the ingredients moving, until just tender. Be careful to not over cook it or it will be broccoli smush...also nice but not what you need for this..lol. Then keep warm whilst you cook the omelette and then filled to the required amount and serve. There should be enough for two omelette's. Enjoy!
