Rocket & Roses Black Bean Feast...savoury and sweet. (vegan & gluten-free)

There aren't words for how much I enjoy being part of the SUMA Wholefoods Bloggers Network. From receiving the latest catalogue, selecting the ingredients through to slaving over scribbled notes of inspiration and that final moment of taking the photographs...I love it all. The challenge is one I need at the moment with the health issues being at an all time low...the mental stimulation is a welcome relief. And although I had to accept much needed help from ML and my lovely Mum I still got the thrill as the recipes came to life...and tasted good. Always a...phew!..moment. 

SUMA have started selling tins of Organic Black Beans and as they are one of my favourite beans I decided to use them as my focus for this posting. I love the versatile nature of these little black gems and use them as often as I can in my cooking. I had quite a list of recipe ideas once inspiration hit and short listing them was quite hard. So I decided to make a new version of three of my favourite savoury forms and have a go at making a sweet treat too. Yes...a sweet treat. 

First up was the stuffing recipe. I wanted a succulent roasted butternut that was filled with a smokey spiced bean and vegetable stuffing. I used a whole dried Chipotle chilli to provide both the smokiness and heat. SUMA Black Beans, cooked quinoa and a selection of vegetables made up the texture of the filling. Added depth of flavour came from a good veggie stock and sun-dried tomato paste. Garnishing with fresh coriander leaves and a squeeze of lime juice finishes the dish to make for one flavour packed meal. The smokiness works perfectly with the sweetness of the butternut. And any leftover stuffing is really great as a filling for a sandwich or wrap. 

Next up was a black bean soup. A soup that is both light on the tum but packed with goodness. I wanted layers of flavour but not a long list of ingredients. I wanted a soup that could be made very easily. One of my favourite soup ingredients is the humble leek. I find great comfort in their flavour but enjoy their light texture when cooked. As a stand alone cooked veggie offering I'm not that fussed but as part of a dish I enjoy them very much. For me the combination of black beans and lime are divine so it wasn't a surprise to find myself juicing up some limes to add to the layers of flavour. Now when I made this dish I fully processed it to a smooth silky consistency which was nice but next time I will part blend the soup as I really am a chunky soup kind of a gal. The choice is yours. The results were a gentle soup that had a good layer of flavour from the earthiness of the leeks (not a literal layer of earth!) and wholesome beans and then the slight citrus sharpness bringing the soup up to another level. It's a quick and easy to make soup...and also turns out a light purple in colour so is quite pretty if that is your thing. 

Next up was a salsa. I have only recently found my salsa love and have been experimenting like a mad thing. This I have come to know...for me to enjoy salsa it has to be raw onion free. I've tried every method of 'treating' the onion before use from steeping in boiled water or vinegar to hopping on one foot and shouting to the moon! I just have to accept that raw onion and I are never to be friends. I can however digest a scant amount of minced spring onion in it. For this recipe I wanted nutritional goodness and a freshness with each mouthful. I adore vine-ripened tomatoes and love to keep a watch on them until they are at their perfect ripeness. Sliced simply in a sandwich with a lot of freshly cracked black pepper...food heaven. So some chopped vine tomatoes were the base for this salsa along with an avocado, spring onion, SUMA Black Beans, freshly cooked corn on the cob, fresh coriander. The dressing was simplicity itself...the juice of one fresh lime and one fresh clementine. Wow..what a salsa this one turned out to be. It smelt great just sitting in the bowl and the flavours and textures mixed perfectly. A healthy salsa that could easily become addictive...you have been warned..

And lastly....a black bean sweet treat. Yes...a sweet treat that isn't packed full of nastiness. No refined sugars in the fudge itself as I used medjool dates for the sweetness. I could have just served this black bean recipe up as it was which would have been a treat in itself, but I had a bag of SUMA Sour Morello Cherries which I was desperate to open. I love the combination of dark bitter chocolate and sweet cherries. The dried cherries weren't perfect as they did include sugar and sunflower oil in their ingredients which isn't my preferred choice but I couldn't argue that their flavour wasn't out of this world. They were juicy, sweet and full of cherry flavoured goodness. If you dislike glace cherries as much as I do because of the fake flavour and nasty texture...these could not be any further apart. As a treat every now and again these dried cherries are worth the little amount of sugar and sunflower oil. I decided to blend some into the fudge mixture itself and then use one as a topping for each piece of fudge. A little goes a long way with these sweet treats as they are intensely rich. One eaten with a bitter dark shot of espresso would be a great combination. And combined with the fact that these are 'healthier' treats...just makes them a food to be savoured indeed. 

So...let's get this black bean feast started....

Rocket & Roses Smokey Black Bean Stuffed Butternut (vegan & gluten-free)

Rocket & Roses Smokey Black Bean Stuffed Butternut
(Original recipe from the Rocket & Roses Vegan Kitchen)       Serves 2

1 lb baby butternut, halved, de-seeded 

1 med red onion, finely chopped
1 garlic clove, micro-grated
1 2" piece of fresh ginger, micro-grated
1 med carrot, peeled and finely chopped
1/2 green bell pepper, finely chopped
1 cup kale leaves, finely chopped
a handful of fresh coriander leaves, minced
1 whole dried chipotle chilli
3 tbsp boiling water
1/2 cup of low sodium veggie stock
2 tbsp sun-dried tomato paste
1/2 cup of cooked quinoa
1 tin of Suma Organic Black Beans, rinsed and drained
a good pinch of dried cinnamon
freshly grated black pepper to season to taste
extra fresh coriander for garnish
lime slices to garnish and juice

Pre-heat the oven to 350'F/180'C/GM 4. Line a baking sheet with parchment paper and set to one side. Take the prepared butternut halves. Carefully extend the cavity of the flesh up to 1cm from the top of the butternut. Place flesh side down onto the baking tray and place into the hot oven. Bake for 15 minutes and remove from the oven. Turn over so the flesh is facing up and put the tray to one side. 

Put the dried chipotle in a small bowl with the 3 tbsp boiling water and leave to soak whilst making the filling. 

Water-saute the red onion until softened. Add the garlic, ginger, green bell pepper and carrot and cook for 5 minutes. Put the sun-dried tomato paste into the hot veggie stock and stir until it has dissolved. 

Mince the softened chipotle and put it and its soaking water into the veggies along with the veggie stock mix. Stir well and then add in the cooked quinoa. Bring to a boil and cook for 5 minutes. Add in the kale and minced coriander and stir well. Cook for 2 minutes and then add the ground cinnamon. Season with black pepper. Cook until the stock has dissipated and the stuffing is thick. Remove from the heat. 

Firmly pack the butternut with the stuffing and press in to fill the cavity. Then mound up extra stuffing to your personal preference. Place the tray back into the oven and bake for 25 minutes or until the butternut is tender. Serve sprinkled with more chopped coriander and lime slices to squeeze over. 

Enjoy! And don't forget the leftover stuffing is unbelievably tasty as a sandwich/wrap filling the next day. 


Rocket & Roses Leek, Black Bean & Lime Soup (vegan & gluten-free)

Rocket & Roses Leek, Black Bean & Lime Soup  Serves 6-8
(Original recipe from the Rocket & Roses Vegan Kitchen)

5 leeks, trimmed, cleaned and sliced
2 garlic cloves, sliced
5 cups low sodium veggie stock
3 tbsp fresh lime juice
1 bayleaf
2 15oz tins of SUMA Organic Black Beans
freshly grated black pepper
fresh coriander leaves

Water-saute the sliced leeks until softened. Take it slowly as you don't want them to brown. Add in the garlic slices, bayleaf, veggie stock and lime juice. Bring to a boil and then reduce the heat to a simmer and cook, covered, for 15 minutes. Add in the black beans and season with a generous amount of black pepper. Bring back to the boil, reduce the heat back to a simmer and cook until the leek is very tender. 

Remove half of the soup and blend until smooth and add it back into the remaining half and stir well to combine or completely blend all of the soup until smooth. Bring back up to a gentle simmer and serve with freshly torn off coriander leaves.

Enjoy! I've enjoyed this soup silky smooth but my preference is by far part blended. I'm just kooky that way...

Rocket & Roses Citrus Fresh Black Bean Salsa (vegan & gluten-free)

Rocket & Roses Citrus Fresh Black Bean Salsa   Yields 2 cups
(Original recipe from the Rocket & Roses Vegan Kitchen)

1 med/large avocado, flesh chopped into 1/2" cubes
2 med/large vine ripened tomatoes, finely chopped
1 spring onion, minced
1/2 tin SUMA Organic Black Beans, rinsed and drained well
1 fresh corn cob, cooked and cooled
1 handful of fresh coriander leaves, roughly chopped
juice from one lime 
juice from one clementine

In a bowl place the avocado, tomatoes, spring onion, black beans, coriander leaves and stir well. Strip the corn kernels from the cob and add to the bowl and stir in. Whisk the freshly squeezed juices together and pour over the veggies. Stir well to coat evenly. Store in an airtight container in the fridge until ready to serve. Or devour freshly made.

And now for the sweet treat....

Rocket & Roses Black Bean Morello Cherry Fudge Pieces (vegan & gluten-free)

Rocket & Roses Black Bean Morello Cherry Fudge Pieces
(Original recipe from the Rocket & Roses Vegan Kitchen)            Makes 24 pieces

1 tin of SUMA Organic Black Beans, rinsed and drained well
3 tbsp coconut oil, melted
4 medjool dates, de-stoned and roughly chopped
1/2 tbsp good quality vanilla extract
2 heaped tbsp smooth cashew butter
1/4 tsp salt
5 heaped tbsp good quality cocoa powder
20 SUMA Sour Morello Cherries
tiny amount of filtered water 

24 SUMA Sour Morello Cherry pieces, to top

Place the beans, dates, cashew butter, salt and cocoa powder into a food processor. Pulse until it has broken down a little. Add in the melted coconut oil and vanilla and blend again. If the mix is dry add the small amount of water to loosen it off. When it is whipped and smooth add in the cherries and pulse until they are very well combined. 

Using a silicone mould, brownie tin or other flat shallow baking dish smooth the fudge mixture into it and smooth off until level. Press the 24 cherries into the fudge so that when you cut out the pieces a cherry will be in the centre of each piece. Place into the fridge for 4 hours to firm up. 

Gently press out the fudge pieces if using a silicone mould and cut each square into four pieces. If using a tin or baking dish, make cuts to make 24 pieces and then gently lever out each piece. Serve with bitter hot coffee for a great balance. 

Store leftover pieces in an airtight container in the fridge and they should stay yummy for about a week....if they last that long!!

Blue Corn Tacos with Sweet Potato and Cucumber Salsa

I am sat at my makeshift desk (the dining table as my real one is dismantled and packed up) feeling a little bleary eyed after a fantastic night out last night. I am also awaiting the stampede of little feet when my sister's little ones arrive for their Saturday visit. I miss coffee! My late night was due to our Valentines treat which was an evening at one of our local theatres to see Lucy Porter the comedienne. Aside from ML reacting to the concentrated perfumes and aftershaves of the other attendees we had a blast and to be fair I was reacting to them as well as after living with no fragrances for nearly two years I find them overwhelming even without having a Salicylate and Nickel Intolerance. However...our evening was a very lovely one. We started with a seaside visit in the rain (which I love!), we ate and then we made out way to the theatre and before long we were sitting in the dark theatre awaiting the lovely Ms Porter. And if there ever was a definition of the saying She may be little but she is fierce Ms Porter is exactly that. She is 4ft 11" which she is quick to point out and has an 6ft 5" husband. She comes out onto the stage and entertains. She is intelligent, witty, funny and self deprecating and we enjoyed every second of her act Northern Soul. Would we go and see her next tour? Yes. Most definitely. A very lovely Valentines evening...we are so pleased we made the effort. 

Today's recipe was one I found cruising Pinterest..what did we do before Pinterest? lol. It is the creation of the Tumblr Pure Taste and to read their original post click here. However in their posting they use the standard yellow corn tortillas but the fillings are their creation and not mine. They looked so tasty I knew I had to try them for myself. Now since going Gluten Free I haven't had a taco/tortilla/burrito and it would be fair to say I have missed them...a lot. And you would think that it would be easy to buy corn tortillas in the shops andyou can, if you don't mind the fact that almost all of them are mixed with wheat flour and a whole heap of junk that I can't believe they put in them so I have abstained. A couple of weeks ago I had a massive clear out and reorganisation of my dried stocks cupboards..and believe me that was a huge task but a satisfying one. In the back of one of the large double cupboards I found a large packet of Maseca Masa Harina which I had bought online and it still had a good shelf life left on it. Bonus! I made it my personal challenge of the week to make my own tortillas/tacos. 

What I did not realise was that across the front of the packet, which in my defence is all in Spanish and Dora has not gotten as far as tortilla making yet, it had Azul in capital letters. So it was a shock when I opened the packet and was faced with an almost purple blue flour. I hastily beat a retreat to my laptop and started researching Azul Masa Harina and was enlightened about the many differing Masa Harinas. Phew..it wasn't a duff batch lol. I printed off a few recipes for Corn Tortillas and I have to say I was lulled into a very false sense of security. Everyone's blog posts all stated that making your own corn tortillas was Oh So Easy! Let me tell you...they LIE! lol. My first attempt was a freaking nightmare. My dough was sticky...the second too dry...then when I got a dough that stayed together for the pressing by the time I had peeled it off the plastic it collapsed around my fingers before I could get it anywhere near the skillets. Damn! So enraged was I had to down tools and dough and leave the kitchen. I was tired, hot and frustrated and never wanted to see a darn taco again..ever! It was not a satisfying experience...ahem. lol 

That night I had dreams about making them. I had nightmares about making them. I woke up rattled and more determined than ever that I was going to master this skill. Ha! I did some more research which sadly just left me feeling inadequate. lol. Everyone else seemed to find it so easy to make them so once again I headed into my kitchen...grrrrrr! I put on some good music, resisted the urge to open a bottle of red and got to work. I made my first batch of dough exactly like the packet said...well to what I could understand...lol then had to add more flour and finally got it to a point where I could make the dough balls ready for pressing which I kept covered in a damp towel. Then I squished the first taco and had my skillet ready to go. I carefully lifted off the top plastic sheet and flipped it over to peel off the second and by the time I had pulled it away it had collapsed...again. I had a perfect hand shaped taco though..lol. I tried again and got it to the unpeeled stage and then when I was about to put it in the skillet it folded up. Urgh! So I cooked it off and then tried again with the next ball...and again...and again...and again...and again...some stayed in a circle shape...others well..not. lol. So out of a mix that should have yielded 14 5 1/2" tacos...I got 6! Stop laughing..this whole process was vexing! lol OK let's just say my taco/tortilla making skills are a work in progress. However I did manage to get edible ones even if they are not that pleasing to the eye..lol 

The fillings were easy to make and I went with the exact recipes that Pure Taste suggested so I sliced sweet potatoes and roasted them in the oven in a little oil and black pepper. The cucumber salsa is the work of seconds really and the guac is just...guac, eh? I was a little worried that the red onion would overpower everything and as I am a raw onion hater I was amazed that I decided to use it. But use it I did..just not as much.  I enjoyed making the assembled tacos and the only niggle I had was Pure Tastes reluctance to specify amounts in the some of the recipes but I understand their method and thought process..I'm just a recipe kinda gal so below is the recipes as they originally wrote them.

The results were interesting...I've never had homemade tacos before so was expecting the hard crunch you get from the shop bought varieties but these were firm but soft. The sweet potatoes were soft and sweet, the cucumber salsa balanced them out perfectly and the guac was garlicky and held it all together...until they started to tear lol. Despite this it was a delicious lunch...

Blue Corn Tacos with Sweet Potato and Cucumber Salsa 
(Cucumber Salsa and filling ideas are from Pure Taste) 

2 cups of Azul Masa Harina flour
1 1/4 cups of warm water 
1/4 tsp salt 

In a bowl mix the masa harina with the salt and then pour in the warm water and mix until a soft dough is formed. Knead in the bowl for 4 minutes and then cover with a damp cloth and leave to sit for 15 minutes. Section the dough into golf sized balls and then re-cover with the wet towel. Heat a skillet over a med-high heat and leave...take one ball of dough and place it between two sheets of plastic...like a freezer bag cut open...then with a heavy based saucepan press down hard on the ball. You should have a 5" disc...carefully peel away the top layer and flip it over onto your hand and then quickly but carefully peel back the second layer and place (Good luck!!) into the heated skillet. Cook for 20 seconds on the first side then carefully flip it over and cook for 1 minute then flip again to the first side for a further 20 seconds. Then remove from the skillet and place in a clean towel and wrap it up. Repeat this until the dough is used up. Allow to sit in the clean towel as it allows them to steam and become more pliable. OR buy some...lol   

Pure Tastes Cucumber Salsa  Makes one cup 
(Recipe from Pure Taste Tumblr)

1 cucumber, peeled and diced 
1/4 cup of coriander/cilantro, chopped
2 tbsp fresh lime juice 
2 tbsp red onion, finely chopped
1-2 dashes of cayenne pepper 
freshly cracked black pepper to taste 
Himalayan salt, to taste 

Place all salsa ingredients into a container with an airtight lid. Stir really well and then put the lid on the container and store in the fridge until ready to use. 

Sweet Potatoes filling:

sweet potatoes quantity as needed, peeled and cut into thick strips. 

Drizzle them in a little oil and place onto a baking sheet. Place in a hot oven and bake until soft..approx 20 minutes. 

No-Fuss Guacamole

Ripe avocado 
fresh lime juice
garlic powder (I used 1 small garlic with core removed, grated)
onion powder 
salt 
pepper 

Mash the avocado and then add the rest of the ingredients and stir until its all blended. Store in a covered container in the fridge until ready to use. 

Assembly:

Place a warm taco on a plate and schmear with Guac, then place the sweet potato along the centre and then cover them with the cucumber salsa. Then serve...

Rocket and Roses Beetroot, Black Bean and Papaya Salsa

Yesterday was the trial run for a new challenge My Love has set me...Mystery Ingredient Challenge Day. This basically means that on a Tuesday evening My Love will bring home a mystery item and I have to make it into something tasty on the Wednesday!! (Please, no more green peppers?! lol) And the first item chosen - a papaya. Now I have had this fruit as a cocktail and in a yoghurt many times. Both were lovely. I have to admit I have never prepared or eaten a fresh one. So this really was a mystery to me. lol. 

So i did a little research and initially found very little to inspire me. It seemed that people used it mainly in a fruit salad. How boring! To me anyway. Later when I was cruising the usual sites that I go to for ideas and recipes I found a posted recipe by 'DeliciousSusan' for a papaya salsa. I was intrigued. I liked the idea of this recipe but wanted to tweak it a little for our tastes. So the recipe below is inspired by both her ideas and mine combined. 

The result was  a vibrant and beautifully coloured salsa. The papaya added a surprising freshness  and spices added depth of flavour. I will definitely be making this again. 


 Rocket and Roses Beetroot, Black Bean & Papaya Salsa
(Recipe inspired by posted recipe by 'DeliciousSusan' and my ideas combined)

1 medium sized beetroot, peeled and cubed
1 medium onion, roughly chopped
1 red pepper, deseeded and chopped
1 stalk of celery, finely chopped
1 medium sized papaya, peeled deseeded and cubed (read full recipe!!)
1 14oz tin of Black Beans, rinsed and drained
1/4 - 1/2 tsp cumin
1/4 - 1/2 tsp mild chilli powder
1/4 - 1/2 crushed red chilli flakes
freshly ground black pepper to season
pinch of salt to season (optional)

Steam or boil the cubed beetroot for 5 minutes to soften

In a medium skillet heat the oil and add the onion, beetroot and the celery and saute for 5 minutes. 

Add the red pepper to the skillet and saute for a further 3 minutes

Add the drained beans to the pan and stir to combine. Turn the heat off and leave to cool in the pan. 

When cooled spoon into a stainless steel container and cover and place in the fridge to chill properly. Just before serving, prep the papaya and stir into the veggie mix. 

Serve with corn tortilla chips and enjoy.

Rocket and Roses Firey Green Pepper and Tomato Salsa

Now, now, now...before you all start to say, "Green Pepper?...Yuck!", please give me a moment to explain this recipe. I am usually on the same band wagon when it comes to much disliked green pepper. Whenever we buy a bag of mixed peppers, they are always the ones hanging around in the pepper draw, waiting to be used. I dislike them raw and to be honest I'm not the biggest fan when they are cooked. But I have been trying to come up with a way to use them up other than the lovely Bean & Caper Sauce that I make to go with pasta. My Love is a great fan of chilli's and salsa's and I was suddenly inspired to make up a recipe and use up the glut of green peppers I had in fridge. 

And it worked. Yes...really it did. This salsa is hot and its flavours only get better with time. And the green pepper really complements the other flavours. It brings a freshness to the salsa that a yellow/red/orange sweet pepper just wouldn't. We tried it with tortilla chips and it is everything a good salsa should be. Give it try...if My Love likes it (and I can't begin to tell you how much green pepper is hated usually lol) then chances are it will work for you too...let me know how you get on? 


 Rocket and Roses Firey Green Pepper and Tomato Salsa
(Original recipe from the Rocket and Roses Vegan Kitchen) 

 6 Reg Sized Tomatoes, part seeded and roughly chopped
2 large Green Peppers, seeded and roughly chopped
1/2 small onion, chopped
1 Red chilli, chopped (seeds left in)
4 tbsp fresh Lime juice
1 tsp Paprika
1 tbsp Olive oil (or oil of your choice)
1 pinch of salt 

In a medium sized bowl toss in the chopped tomatoes, peppers, chilli and onion and stir to combine. Sprinkle the paprika and salt over the veggies and stir again to evenly coat them. Pour over the lime juice and stir again. Then add the olive oil and give it all one final mix. Then transfer to a container with a tightly fitting lid and store in the fridge. 
It's good if you want to eat it straight away but it does get better with time. Can be made a couple of days ahead if you want it for an occassion and the veggies still stay crisp. Enjoy!
