Spices...sweet potato...red onion...what is not to like about this?? lol. Well that's what went through my mind when I found this little gem hiding in Linda Majzlik's cook book A Vegan Taste of East Africa.
From the moment I heated up the onion and ginger...to adding the spices and then the sweet potato and stock I was salivating. The aroma clung to the house for a few hours after and it was heaven. It's simple to make..tastes gorgeous and a pleasure to eat. Make this for yourself and see..
Spicy Sweet Potato Soup |
(Recipe from A Vegan Taste of East Africa/Majzlik)
1lb/450g sweet potatoes, peeled and diced
4oz/100g tomato, skinned and chopped
1 red onion, finely chopped
1 small red chilli, deseeded and chopped (Or 3/4 tsp chilli flakes)
1 garlic clove, crushed
1" piece of fresh ginger, grated
1 dsp veggie oil
1 rounded tsp ground coriander
1 rounded tsp ground cumin
1/4 tsp ground cardamon
1/4 tsp cinnamon
1/4 tsp tumeric
black pepper
20fl oz/ 600ml veggie stock or water
Fry the onion and ginger in the oil until softened. Add the spices, chilli, garlic and tomato and stir around for 1 minute, then put in the sweet potatoes and stock and bring to the boil. Cover and simmer for 15 minutes until the potato is cooked. Blend the soup with a hand held blender in pan until smooth. Heat the soup for a further couple of minutes until has thickened slightly.
Serve.
